It’s the day after Christmas.
The fridge is full of leftovers, but you don’t fancy a reheated Christmas lunch and are out of ideas.

7. Brussel Sprout Carbonara
Stuck with a tonne of sprouts?
Slice them up and use them in this pasta dish with some bacon.
This Brussels sprout carbonara is one of my new favourite dishes, but I only discovered it because I had some sad sprouts leftover from Christmas lurking at the back of my fridge that were starting to make me feel guilty. Instead of just being boiled as usual, the sprouts in this are shredded & tossed with the bacon bits over a high heat to caramelise & char slightly, meaning that they add heaps of great, almost mustardy flavour to the classic creamy base of the carbonara. A little fennel seed & a shake of dried chilli flakes take the flavour to a whole extra level of deliciousness. Trust me on this. You'll like these sprouts. Start a pan of salted water at a rolling boil. Cook the spaghetti. Meanwhile, dice 3 slices of smoked bacon and fry in a little olive oil over a medium heat. Prepare the sprouts by trimming off the outer leaves and shredding. Once the bacon is golden, add the sprouts and turn up the heat, tossing frequently until the sprouts are lightly caramelised at their edges. Season. Add 2tsp fennel seed, 1/2tsp dried chilli seed & 1 clove of diced garlic, stir and take off the heat. Beat 3 egg yolks in a small bowl with a generous grating of Parmesan, a dash of cream, 1 tbsp Greek yoghurt & lots of black pepper. Drain the spaghetti & stir in the egg mixture off the heat along with a splash of boiling water. Add the Brussels sprouts & bacon, stir, and serve with more Parmesan on top. #brusselssprouts #carbonara #christmasleftovers #ofm #foodandwine #f52grams #basuperfoodies

8. Roast Beef And Broccoli Asian Style
If you’re left with a lot of roast beef and don’t fancy cold sandwiches, you can quickly stir-fry slices of it with some vegetables to make this Asian dish.
9. Leftover Ham Bones And Vegetable Stock
Leftovers are great for making into stock.
You can use anything, from bones and vegetable peelings to parmesan rinds.
No recipe is needed for this stock – just place whatever you have in a big pot of water and boil for an hour.
Eat the resulting stock just as a soup, or with ramen noodles.
10. Bubble And Squeak Fritters
Bubble and squeak is delicious and these fritters are so easy to make.
Even kids can be tricked into eating vegetables when they’re cooked like this.
Have this as a side to another brunch dish.
